Bananas

Okay, I appreciate the fact that the clerk at Albertson's was trying to give me a deal. I really do. Being on a budget and all, I appreciate every penny I can pinch. However, a free bunch of bananas is equal to a panicky Dev baking before the bananas go completely bad. Why? Because I cannot eat a bunch of bananas before they begin to rot. So, my day has consisted of baking banana muffins, banana bread, banana oat breakfast cookies, banana oat muffins, and let's not forget the banana pancakes. I'd share, but they're all baked with Splenda because I try to keep my sugar intake to a minimum ~ nothing health related, really. Just trying to keep the carbs down. Which is an oxymoron considering what I've been baking today ~ but hey, they're all good carbs.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup acini di pepe pasta
1 can crushed pineapple -- (20 ounce) drained with juice reserved
1 can mandarin oranges -- (15 ounce) drained with liquid reserved
1 container frozen whipped topping -- (8 ounce) thawed
7 ounces miniature marshmallows
1 cup white sugar
2 eggs -- beaten
1/2 teaspoon salt
3 tablespoons all-purpose flour
1 jar maraschino cherries -- (10 ounce) drained (optional)

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain.

In medium saucepan, combine reserved liquids from pineapple and oranges (equals about 1 1/2 cups), sugar, eggs, salt and flour. Cook until thick, stirring constantly. When mixture becomes thick, add cooked pasta and refrigerate overnight.

The next day, add pineapple and oranges, whipped topping and marshmallows to taste. Mix together and top with cherries if desired. Keep chilled until served.

Chilly Chili
I love it when the weather gets cooler ~ the hot days are behind us for another year and now we're adapting to the autumn temperatures. What does that mean to me? Well, other than the fact that my house is no longer a sweatbox, it means it's time for my annual chilly chili day. I slow cook a big pot of chili all day long, make a big batch of fry bread, and have lots of cheese, green onions and sour cream to go along with it. You'd think making all that food I'd be serving an army, right? Well, wrong. It's just me. Usually my niece is with me when I make it, but not today. But regardless, I'm excited. The weather is finally turning!

What excites you about the change of weather? Anything you're looking forward to as Autumn approaches?
